Intervals Launches at Hong Kong International Airport’s Sky Bridge

  • 2023-06-15

Intervals, an unprecedented airport destination that promises an unparalleled world-class cocktail and dining experience, is being unveiled at Hong Kong International Airport (HKIA). Embarking on a remarkable culinary journey, passengers passing through Hong Kong can now indulge in the extraordinary offerings of Intervals—a first-of-itskind concept that brings together the finest cocktails in a captivating setting. Intervals is a destination in its own right, a creative concept that elevates the airport experience with a unique food and drink programme on the Sky Bridge. The world’s longest airside bridge spanning 28 metres above the ground, this iconic venue offers the most spectacular views of the entire air field.

Intervals is a new creative concept from pioneering airport hospitality leader Plaza Premium Group (PPG), developed by Mei Mei Song, Director of Global Brands and Transformation and the next-generation of the group, together with creative director Victoria Chow, founder of acclaimed Hong Kong bar The Woods. Intervals, designed by Australian architect Mitchel Squires, has taken three years to conceptualise. The name ‘Intervals’ is inspired by the idea that the time of day becomes fluid while travelling, and that key actions are measured in intervals of time. Whether it’s how long it takes to clear security, the transit time, the time it takes to get to the gate, or the time between boarding time and final call. In line with PPG’s core mission to “make travel better”, Intervals is a comprehensive dining concept purposefully designed for the airport setting: from the food and beverage offerings, to interactive and engaging experiences, everything from the menu design to a dedicated Intervals platform that provides knowledge about the drinks alongside beverage-focused  travel inspirations, as well as partnerships with homegrown businesses and talent, coupled  with immersive interior design and the unbeatable sky bridge view.

Airport Authority Hong Kong and Plaza Premium Group have a long-established business relationship since 1998, when the group introduced the world’s first independent airport lounge, Plaza Premium Lounge at HKIA. 25 years on, the opening of Intervals will further strengthen their commitment to raise the bar and pioneer future-forward customer experiences.

Mei Mei Song said: “Our commitment is to make travel better and we are grateful that Hong Kong International Airport has always offered a platform for us to drive new concepts to uplift the passenger experience. As we celebrate our 25th anniversary this year, it is fortuitous that we are able to work together again to introduce a new experience by creating a world-class airport bar that is a destination in itself. We hope everyone can take a moment and treat themselves to their favourite tipple, over some good food with spectacular views of the airport, giving passengers a new way to spend their time at the airport.

This project will also complement HKIA’s expansion plan highlighted by the completion of the third runway, which will allow the airport to accommodate an additional 30 million passengers each year. To strengthen the airport’s positioning as the best airport in the world, it is crucial to provide more top-notch experiences to attract traffic into the Greater Bay Area, and PPG stands at a point of inflection to innovate new concepts and experiences to host future travel behaviour for the next 25 years ahead. Alby Tsang, Head of Retail & Advertising of Airport Authority Hong Kong, said, “We are delighted to welcome Intervals to join HKIA to offer passengers with elevated dining experience. Sky Bridge is the world’s longest airside bridge and it is aspired to be the iconic feature at HKIA and we hope passengers could enjoy the stunning view of airport during their visit at Intervals.
