CAM Completed Annual On-site Audit of Sub-concession of Aircraft Catering Services at Macau International Airport

In order to monitor the food quality and food safety of the sub-concessionaire of aircraft catering services, Macau Catering Services Company Limited (MCS), and to ensure its food quality and safety of inflight meal meets the required industry standards, Macau International Airport Company Limited (CAM) engages professional auditing firms to perform multiple remote and on-site audits on food quality and food safety for MCS every year.
On 14th - 15th October 2024, CAM conducted a two-day on-site audit of MCS with the assistance of Medina Food Inc. (MQ), a leading international auditing firm with over 40 years of experience in the inflight catering industry. During the audit, CAM representatives together with MQ auditor visited the catering building to rigorously review various aspects of food quality and food safety in airline catering. This included procurement procedures, receiving processes, inventory management, ingredient handling, menu specifications, customer service & communication, food preparation, tray setup, and meal dispatch etc.
The audit aims to comprehensively assess that each aspect meets the standards and to encourage MCS to pursue continuous improvement. Through rigorous business audit, it can assist CAM to confirm that the food quality and food safety of the aircraft catering services provided by MCS meets contractual requirements and industry standards, and CAM also expresses gratitude to MCS for their active cooperation during this audit.
